Ingredients
3 pounds 3 Potatoes, washed, peeled and diced into 1″ pieces
6 6 eggs, washed
1 cup 1 mayonnaise
1/2 cup 1/2 sweet relish with juice
1/4 cup 1/4 onion finely diced
1 tbsp 1 mustard
1 tsp 1 vinegar (to taste)
salt and pepper to taste
Directions
- PREPARE POTATOES: Wash, peel and dice potatoes into 1″ pieces.
- BOIL POTATOES AND EGGS TOGETHER: Place prepared potatoes in bottom of large pot with 1 tsp salt. Add eggs on top. Cover with water. Boil until potatoes are done (split easily when pierced with a fork). Remove eggs and drain potatoes.
- PREPARE EGGS: Shock eggs in ice cold water. Peel and cut into pieces.
- ASSEMBLE: Add all ingredients together in a large mixing bowl. Refrigerate at least four hours, or until ready to serve.
