Ingredients

  • Dressing
  • 1/4 cup 1/4 olive oil

  • 1/4 cup 1/4 vinegar

  • 2-3 tbsp 2-3 maple syrup, honey or sugar (to taste)

  • 1 tsp 1 salt

  • 1/2 tsp 1/2 black pepper

  • 1 tsp 1 dijion mustard

  • Salad Ingredients
  • 1 bunch 1 kale, chopped (or 5 oz bag)

  • 1/2 cup 1/2 onion, finely chopped (red onion preferred)

  • 1/2 cup 1/2 apples, thinly sliced

  • 1/2 cup 1/2 walnuts, chopped (can substitute other nuts)

  • 1/2 cup 1/2 goat cheese (can also use feta)

  • 1/2 cup 1/2 craisens

Directions

  • Mix together dressing.
  • Add onion to the dressing and mix to coat
  • Add the kale and mix thoroughly, coating kale with dressing.
  • Add remaining ingredients and serve.
