Parmesan Mayo Roasted Cauliflower (Keto)

Ingredients
- Blanch in boiling water for 4 minutes:
2 pounds 2 cauliflower, about 1 head
1/2 tsp 1/2 salt
- Remove cauliflower from water and place in baking dish.
Mix together and spread on blanched cauliflower: 1 cup 1 mayonnaise
1 cup 1 parmesan cheese (grated or ground)
1/2 tsp 1/2 salt or garlic salt
1/2 tsp 1/2 black pepper
- Bake in preheated 400 F oven for 20-25 minutes.
Directions
- PREHEAT: Preheat oven to 400 F
- BLANCH: Fill a large soup pot half way with water and add 1/2 tsp salt. Bring to boil. Blanch cauliflower in boiling water for 4 minutes to soften. Remove.
- TOPPING: Mix mayonnaise, parmesan cheese, salt and pepper together. Spread on top of cauliflower in medium baking dish.
- BAKE: Bake for 20-25 minutes until golden brown on top.
