Simple Macaroni Salad

This recipe makes a big serving bowl full – enough to bring to a potluck or serve up at a cookout. Using pickle juice for the dressing is the just right shortcut for perfect results.

Ingredients

  • 2 cups 2 dry macaroni

  • 1 1 bell pepper, diced

  • 1 1 onion, diced

  • 4-5 4-5 celerly stalks, sliced

  • 1 cup 1 sweet pickles, diced

  • Dressing for Macaroni Salad
  • 1 cup 1 juice from sweet pickles

  • 2 cups 2 mayonnaise

  • salt, pepper and additional pickle juice to taste

Directions

  • COOK PASTA: Cook the macaroni noodles according to package instructions. Rinse with cool water when done and let cool.
  • PREP VEGETABLES: Dice vegetables and pickles up into bite sized pieces.
  • ASSEMBLE: Add all ingredients to a large serving bowl and mix. Cover and let chill in fridge for a few hours to let flavors to develop. Keep refrigerated until serving.

Notes

  • No sweet pickles? You can also use dill pickles, but will need to add sugar to the recipe. Simply follow the recipe, then season with white sugar to taste.
  • Vegan option: Use a vegan mayonnaise to make a vegan macaroni salad.
  • Make Ahead: You can make this recipe the day before and store in the fridge. Leftovers will store for a few days covered in the fridge.
