An oatmeal crisp topping over warm blueberry filling, serve with yogurt for breakfast or ice cream for dessert. This super simple recipe is easy to make, even in the morning.

Ingredients
- Blueberry Filling
4 cups 4 blueberries, fresh or frozen
1/2 cup 1/2 sugar
1/4 cup 1/4 flour
- Oatmeal Crisp Topping
1 stick 1 cold butter (1 stick = 1/2 cup), grated
1 cup 1 flour
1 cup 1 oatmeal
3/4 cup 3/4 brown sugar
1 tsp 1 cinnamon (optional)
Directions
- PREPARATION: Preheat oven to 375F
- BLUEBERRY FILLING: In 8″ square pan, add blueberries, 1/4 cup flour and 1/2 cup white sugar. Gently mix to lightly combine. Place in oven to soften blueberries while preparing the topping.
- OATMEAL CRISP TOPPING: Grate the cold butter. Add in remaining ingredients and mix until coarse crumbs. Topping can also be prepared in a food processor.
- MIX BLUEBERRY FILLING: Remove the blueberry filling from the oven and mix with a fork to break up blueberries. Since all blueberries are different in sweetness and tartness, taste test the filling. Sweeten or add lemon juice to taste if needed.
- ADD TOPPING: Top with the oatmeal crisp topping.
- BAKE: Bake for about 30 minutes, until blueberries are bubbly and oatmeal topping is crisp.
