Black bean salsa is an easy to make dip, we also love it as a taco topping. It's very easy to make, and is also affordable and filling. You can also use Italian dressing to save time.

Ingredients

  • Main Ingredients
  • 1 15oz can 1 Canned corn, drained

  • 1 15 oz 1 Canned black beans, rinsed and drained

  • 1 cup 1 Cherry Tomatoes, halved (or substitute 1 can Rotel tomatoes)

  • 1 1 Onion, chopped

  • 1 1 Bell Pepper, chopped

  • Dressing – Can substitute for Italian Dressing
  • 1-2 1-2 Lemons, juiced – to taste

  • 2 Tsp 2 Sugar

  • 1/2 Tsp 1/2 Salt

  • Optional Ingredients
  • 1/4 Cup 1/4 Cilantro, chopped

  • 2 2 Avocados, peeled, pitted and diced

  • 1 1 Jalapeño pepper, chopped (remove seeds for less spice)

Directions

  • Add all ingredients together in large bowl.
  • Refrigerate for at least 30 minutes to allow flavors to develop.

Notes

  • You can also substitute Italian dressing for the seasonings and lemon to make it even easier.
  • Choose a green bell pepper and red onion for more color.
