These are marvelous! Easy to make in indivudual cups, and easy to serve – no cutting or plating. Makes four no bake cheesecake cups.

Ingredients
- Crust
1/2 cup 1/2 crushed graham crackers (or similar cookies)
2 tbsp 2 butter, melted
1 tbsp 1 sugar
- Cheesecake Mixture
8 oz block 8 cream cheese
1 cup 1 heavy whipping cream
1/2 cup 1/2 sugar
2 tsp 2 lemon juice
1 tsp 1 vanilla
Directions
- CRUST: Melt butter and add graham crackers and sugar. Mix into a coarse consistency. Divide between four small glasses, jars or other small cup and press down firmly.
- CREAM CHEESE MIXTURE: Beat cheesecake ingredients together until stiff peaks form using a hand or stand mixer. Divide between the cups.
- CHILL: Chill for at least four hours.
- SERVE: Garnish with whipped cream, berries, or other toppings and serve. No slicing required!

These are cute and tasty but I wouldn’t call them cheesecake. It’s more like whipped cream with a hint of cheesecake flavor. Very easy and still a decent look dessert, thought. When I was making them, I questioned the “1 ounce block of cream cheese”. I’m wondering if that was a mistake. Probably needs a lot more.
