Pan Fried Steak

Ingredients
Steaks (T-Bone, Ribeye or New York)
Cooking Oil
Salt and Pepper
Butter
Directions
- ROOM TEMP: Bring steaks to room temperature by leaving out on the counter for about 30 minutes.
- PREPARE STEAKS: Pat steaks dry to remove any moisture with paper towel. Season generously with olive oil, salt and pepper. Work the seasonings into the meat on both sides.
- COOKING: Preheat a heavy pan on high heat with oil and add steaks. Steaks will sizzle. Press steaks firmly into the pan.
- FLIP: When fragrant (about 3 minutes), flip over.
- DONENESS: When steak is still gummy in center but springy on outsides, it is medium rare. You can also check doneness with a thermometer: rare is 125 degrees and medium is 140 degrees. Remember that steaks will continue to cook after removing from pan, do not overcook.
- BUTTER: Top steaks with pats of butter.
- REST AND SERVE: Let steaks rest for about 10 minutes before serving.

- STEAK DRIPPINGS: Sauté onions, mushrooms or other vegetables in the drippings. Or add in white rice and season with salt and pepper for an easy dirty rice side.
