Recipe to make chicken and rice soup from rotisserie chicken, or canned chicken. This makes a flavorful, satisfying soup quickly and easily, using basic ingredients.

Ingredients

  • 8 cups 8 chicken stock or broth (or equivalent water and chicken bouillon)

  • 2 tbsp 2 olive oil

  • 1 1 onion, finely diced

  • 4 4 carrots, peeled and finely diced

  • 4 4 celery stalks, finely sliced

  • Cooked Chicken (1 small rotisserie chicken or 2 cans of canned chicken)

  • 2 tsp 2 salt

  • 1 tsp 1 black pepper

  • 1 tsp 1 garlic powder

  • 1/2 tsp 1/2 thyme

  • 1 cup 1 rice

Directions

  • Saute onions and celery in olive oil in large soup pot.
  • Add in carrots, chicken and spices and 4 cups of chicken stock.
  • Add in rice. Cover with lid.
  • Turn heat to lowest setting and let rice cook.
  • When most of the broth is absorbed and rice is tender, remove from heat.
  • Add remaining chicken broth and serve.
