minutesRecipe to make chicken and rice soup from rotisserie chicken, or canned chicken. This makes a flavorful, satisfying soup quickly and easily, using basic ingredients.

Ingredients
8 cups 8 chicken stock or broth (or equivalent water and chicken bouillon)
2 tbsp 2 olive oil
1 1 onion, finely diced
4 4 carrots, peeled and finely diced
4 4 celery stalks, finely sliced
Cooked Chicken (1 small rotisserie chicken or 2 cans of canned chicken)
2 tsp 2 salt
1 tsp 1 black pepper
1 tsp 1 garlic powder
1/2 tsp 1/2 thyme
1 cup 1 rice
Directions
- Saute onions and celery in olive oil in large soup pot.
- Add in carrots, chicken and spices and 4 cups of chicken stock.
- Add in rice. Cover with lid.
- Turn heat to lowest setting and let rice cook.
- When most of the broth is absorbed and rice is tender, remove from heat.
- Add remaining chicken broth and serve.
