How to make pan seared scallops in garlic cream sauce.  A deliciously indulgent, restaurant quality meal, that is so easy and fast to make.  Serve over rice or pasta.

Ingredients

  • 1 pound large bay scallops, thawed

  • 2 tbsp cooking oil

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 5 cloves garlic, finely minced

  • 2 tbsp butter

  • 1/4 cup chicken stock

  • 1 cup heavy cream

Directions

  • Heat oil up in large fry pan. When hot, add scallops, do not overcrowd the scallops.
  • Generously salt and pepper scallops. Cook for about 2-3 minutes.
  • Flip scallops over and cook for about 2-3 minutes, or until opaque.
  • Remove from pan and turn heat to low.
  • Add butter and let melt.
  • Add garlic and cook until fragrant.
  • Add chicken stock and cook, stirring to clean pan.
  • Add heavy cream and cook until thick, stirring constantly.
  • Season sauce with salt and pepper if needed.
  • Turn off heat and add scallops back to fry pan.
  • Garnish with lemon, parsley and red pepper flakes if desired.
