Ingredients
1 pound large bay scallops, thawed
2 tbsp cooking oil
1/2 tsp salt
1/2 tsp black pepper
5 cloves garlic, finely minced
2 tbsp butter
1/4 cup chicken stock
1 cup heavy cream
Directions
- Heat oil up in large fry pan. When hot, add scallops, do not overcrowd the scallops.
- Generously salt and pepper scallops. Cook for about 2-3 minutes.
- Flip scallops over and cook for about 2-3 minutes, or until opaque.
- Remove from pan and turn heat to low.
- Add butter and let melt.
- Add garlic and cook until fragrant.
- Add chicken stock and cook, stirring to clean pan.
- Add heavy cream and cook until thick, stirring constantly.
- Season sauce with salt and pepper if needed.
- Turn off heat and add scallops back to fry pan.
- Garnish with lemon, parsley and red pepper flakes if desired.
