Ingredients
4 large russet potatoes (peeled & chopped)
4 cups whole milk
1 cup chicken broth
1 cup cheddar cheese (shredded)
3/4 cup real bacon bits
3/4 cup sour cream
1/2 onion (diced)
1/4 cup flour
1 clove garlic (chopped)
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
scallions for garnish
Directions
- In a large pot over medium-high heat sauté onions and garlic in butter for 2 minutes.
- Add flour and stir to combine.
- Slowly add chicken broth while stirring.
- Add milk and continue stirring.
- Add potatoes, black pepper, and salt and stir to combine.
- Bring to boil, then reduce heat to a simmer, cover and cook for 25 minutes.
- Add sour cream, most of cheese and bacon bits (saving some for toppings).
- Remove from heat.
- Garnish with remaining cheese, bacon bits, and scallions.
