Fast and easy way to make baked potato soup.

Ingredients

  • 4 large russet potatoes (peeled & chopped)

  • 4 cups whole milk

  • 1 cup chicken broth

  • 1 cup cheddar cheese (shredded)

  • 3/4 cup real bacon bits

  • 3/4 cup sour cream

  • 1/2 onion (diced)

  • 1/4 cup flour

  • 1 clove garlic (chopped)

  • 2 tablespoons butter

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • scallions for garnish

Directions

  • In a large pot over medium-high heat sauté onions and garlic in butter for 2 minutes.
  • Add flour and stir to combine.
  • Slowly add chicken broth while stirring.
  • Add milk and continue stirring.
  • Add potatoes, black pepper, and salt and stir to combine.
  • Bring to boil, then reduce heat to a simmer, cover and cook for 25 minutes.
  • Add sour cream, most of cheese and bacon bits (saving some for toppings).
  • Remove from heat.
  • Garnish with remaining cheese, bacon bits, and scallions.
