Ingredients

  • 1 1 egg

  • 1 1 sliced green onion (optional)

  • 1 pinch 1 salt

  • 1 1 medium size flour tortilla

  • 2 Tablespoon 2 shredded cheese

  • 2 Tablespoons 2 ham, bacon, breakfast sausage

  • Other optional filling: spinach, tomatoes, jalapeños, cilantro

Directions

  • In a small bowl beat one egg, green onions and salt with a fork.
  • In a medium non stick pan. Pour the egg into the pan and swirl around to cover the bottom of the pan in egg. Cook egg mixture on medium heat.
  • Add the tortilla on top of the partially cooked egg. Continue to cook until egg is done, then flip and add in the meat and cheese of your choice.
  • Fold the tortilla in half and cook until cheese is melted and tortilla is crispy and golden brown.
  • Slice, garnish with cilantro or parsley and serve with a dollop of sour cream.
