Ingredients
1 1 egg
1 1 sliced green onion (optional)
1 pinch 1 salt
1 1 medium size flour tortilla
2 Tablespoon 2 shredded cheese
2 Tablespoons 2 ham, bacon, breakfast sausage
Other optional filling: spinach, tomatoes, jalapeños, cilantro
Directions
- In a small bowl beat one egg, green onions and salt with a fork.
- In a medium non stick pan. Pour the egg into the pan and swirl around to cover the bottom of the pan in egg. Cook egg mixture on medium heat.
- Add the tortilla on top of the partially cooked egg. Continue to cook until egg is done, then flip and add in the meat and cheese of your choice.
- Fold the tortilla in half and cook until cheese is melted and tortilla is crispy and golden brown.
- Slice, garnish with cilantro or parsley and serve with a dollop of sour cream.
