Recipe for barbecue chicken thighs in the slow cooker. This affordable, easy make ahead dinner serves up tender, moist chicken with a caramelized barbecue sauce topping, delicious with rice, potatoes or a pasta salad.

Ingredients

  • 6-8 chicken thighs, can be boneless or bone-in with skin, can be frozen or thawed

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/4 cup olive oil

  • 1 cup barbecue sauce

Directions

  • Place the chicken skin side up in the slow cooker.
  • Top with salt, pepper and olive oil.
  • Slow cook for 3 hours on high or 6 hours on low.
  • Remove from slow cooker and place on a tray.
  • Cover top in barbecue sauce.
  • Broil in oven until barbecue sauce is caramelized.
