Ingredients
- Wet Ingredients
1 1 medium zucchini, grated
1 Cup 1 sugar
2 2 eggs
1 Tsp 1 vanilla
1/2 Cup 1/2 oil or melted butter
- Dry Ingredients
2 Cips 2 flour
1 Tsp 1 baking soda
1/4 Tsp 1/4 salt
1 Tbsp 1 ground cinnamon
Directions
- Preheat oven to 375 degrees.
- Grate zucchini. Do not drain moisture.
- Add sugar to zucchini.
- Add eggs, vanilla and oil.
- Dry ingredients – sift together in a separate bowl.
- Mix the dry ingredients into the wet.
- Pour into a greased or lined baking dish or loaf pan(s).
- Bake at 375 degrees until top outside edges are golden brown.
