Ingredients

  • Wet Ingredients
  • 1 1 medium zucchini, grated

  • 1 Cup 1 sugar

  • 2 2 eggs

  • 1 Tsp 1 vanilla

  • 1/2 Cup 1/2 oil or melted butter

  • Dry Ingredients
  • 2 Cips 2 flour

  • 1 Tsp 1 baking soda

  • 1/4 Tsp 1/4 salt

  • 1 Tbsp 1 ground cinnamon

Directions

  • Preheat oven to 375 degrees.
  • Grate zucchini. Do not drain moisture.
  • Add sugar to zucchini.
  • Add eggs, vanilla and oil.
  • Dry ingredients – sift together in a separate bowl.
  • Mix the dry ingredients into the wet.
  • Pour into a greased or lined baking dish or loaf pan(s).
  • Bake at 375 degrees until top outside edges are golden brown.
