Ingredients

  • 2 tbsp olive oil

  • 1 onion, finely diced

  • 4 celery stalks, finely sliced

  • 2 pounds ground beef

  • 1 tsp salt and 1 tsp pepper

  • 4 cups soup stock (can be made from bouillon)

  • 4 medium potatoes, peeled and diced

  • 4 large carrots, sliced

  • 1 can diced tomatoes (15 oz)

  • 1 can corn and/or green beans (15 oz) or other vegetables – optional

  • 1/2 tsp rosemary and 1/2 tsp thyme

  • 1 tsp brown sugar

  • Salt and pepper to taste

Directions

  • Saute onions and celery in olive oil.
  • Add ground beef and 1 tsp salt and 1 tsp pepper.
  • Saute until ground beef is cooked.
  • Add remaining ingredients.
  • Simmer on low heat until potatoes are done.
  • Serve with rice, crackers or bread rolls.

Notes

  • Can be made in Instant Pot. Saute as directed and add in remaining ingredients. Add lid and set for 10 minutes on high pressure. Release steam and serve.

  1. Greetings, I believe your site may be having browser compatibility issues. Whenever I take a look at your web site in Safari, it looks fine but when opening in I.E., it has some overlapping issues. I merely wanted to give you a quick heads up! Besides that, great website!
