Ingredients
2 tbsp olive oil
1 onion, finely diced
4 celery stalks, finely sliced
2 pounds ground beef
1 tsp salt and 1 tsp pepper
4 cups soup stock (can be made from bouillon)
4 medium potatoes, peeled and diced
4 large carrots, sliced
1 can diced tomatoes (15 oz)
1 can corn and/or green beans (15 oz) or other vegetables – optional
1/2 tsp rosemary and 1/2 tsp thyme
1 tsp brown sugar
Salt and pepper to taste
Directions
- Saute onions and celery in olive oil.
- Add ground beef and 1 tsp salt and 1 tsp pepper.
- Saute until ground beef is cooked.
- Add remaining ingredients.
- Simmer on low heat until potatoes are done.
- Serve with rice, crackers or bread rolls.

Notes
- Can be made in Instant Pot. Saute as directed and add in remaining ingredients. Add lid and set for 10 minutes on high pressure. Release steam and serve.
