Ingredients

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 1 medium bell pepper, diced

  • 3 celery stalks, sliced

  • 3 garlic cloves, minced

  • 2 pounds smoked sausage, sliced

  • 1 can diced tomatoes

  • 4 cups (1 carton) chicken stock

  • 2 cups uncooked jasmine rice

  • 1-2 tbsp Cajun seasonings (to taste)

  • 1 tsp packed brown sugar

  • Salt and pepper (to taste)

Directions

  • Saute in instant pot the vegetables and smoked sausage in the olive oil.
  • When onions are translucent, add in remaining ingredients.
  • Seal lid on instant pot, and press “rice” setting. Let the instant pot complete the “rice” cycle (about 15 total minutes).
  • Release pressure and mix and season if needed.
  • Serve with cilantro or other garnish.
