Instant Pot Jambalaya

Ingredients
2 tbsp olive oil
1 medium onion, diced
1 medium bell pepper, diced
3 celery stalks, sliced
3 garlic cloves, minced
2 pounds smoked sausage, sliced
1 can diced tomatoes
4 cups (1 carton) chicken stock
2 cups uncooked jasmine rice
1-2 tbsp Cajun seasonings (to taste)
1 tsp packed brown sugar
Salt and pepper (to taste)
Directions
- Saute in instant pot the vegetables and smoked sausage in the olive oil.
- When onions are translucent, add in remaining ingredients.
- Seal lid on instant pot, and press “rice” setting. Let the instant pot complete the “rice” cycle (about 15 total minutes).
- Release pressure and mix and season if needed.
- Serve with cilantro or other garnish.
