Yes, you can make pico de gallo using canned tomatoes. I’ve been doing it for years, and found it’s cheaper, faster, and the results may just be better than fresh pico de gallo.

The secret? Rotel canned tomatoes and lemon juice. I promise, this is the way.

Pico de Gallo using Canned Tomatoes

Ingredients

  • 1 medium 1 yellow or white onion, finely diced

  • 2 cans 2 Rotel canned diced tomatoes with green chilies

  • 1/2 cup 1/2 cilantro, finely chopped

  • 1-2 large 1-2 lemon, juiced (to taste)

  • 1 tsp 1 sugar (to taste, dependant on sweetness of lemon)

  • 1/4 tsp 1/4 salt

Directions

  • PREP: Finely diced the onion, chop the cilantro and juice the lemon.
  • MIX: Mix all ingredients together in a glass bowl.
  • MARINATE: Cover and refrigerate for half hour, to let flavors develop.
  • SERVE: Serve as an appetizer with tortilla chips, or as a topping for tacos or fajitas.

Notes

  • Try using other versions of rotel canned tomatoes, adding garlic or fresh jalapenos, or other bell peppers.
  • Add in minced garlic or diced jalapeños to turn up the heat.

Why Canned Tomatoes to Make Pico de Gallo

I live in rural Alaska, with the nearest grocery store 100 miles away. We grocery shop once or twice a month, and unfortunately, it’s hard to keep fresh tomatoes that long.

My sister had come up with a blender salsa using canned tomatoes that we love, so I thought, why not use canned tomatoes for pico?

After years of experimenting, first trying basic canned tomatoes, then moving to rotel canned tomatoes. Then I tried limes, vinegar, and finally settled on lemons.

This salsa is a crowd pleaser, and I can quickly and easily (and affordably) make enough to feed a crowd!
