Ingredients
- Sear together first in slow cooker or pan:
3-4 pound 3-4 Beef Roast
2-4 tbsp 2-4 Olive oil
- Vegetables
4 4 Carrots, washed and chopped 2″ long
4 4 Celery stalks, washed and chopped 2″ long
3 3 Potatoes, chopped
- Seasonings
1 cup 1 broth or water
1 tsp 1 salt
1/2 tsp 1/2 black pepper
1 packet 1 Onion Soup Mix or garlic salt to taste
Directions
- SEAR ROAST: With slow cooker in “saute” mode, add oil. When oil is hot, add the roast and let it sear one side.
- PREP VEGETABLES: While the roast is searing, begin chopping up vegetables. Flip and rotate the roast to sear all sides, while continuing to chop vegetables.
- PUT EVERYTHING IN THE POT: When all the vegetables are ready, add the seasonings, beef stock (or water) and vegetables to the slow cooker.
- SLOW COOK: Set the slow cooker to 8-10 hours on low. Serve when slow cooker completes.

- For KETO or Paleo Diets – no potatoes, use brussel sprouts, cauliflower, or other diet friendly vegetables.
