2 pounds carrots
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Directions
- Wash, cut and peel if desired.
- Toss carrots in olive oil, salt and black pepper.
- Bake at 425 F for 25-30 minutes.
