Ingredients

  • 1 medium onion, finely diced

  • 3 medium potatoes, finely diced

  • 1 large bell pepper, finely diced

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 pound smoked sausage, sliced

  • 4-6 eggs

  • grated cheddar cheese (optional garnish)

Directions

  • About an hour before breakfast should be done, preheat oven to 400 degree and cut up vegetables.
  • Mix the vegetables with olive oil and spread out on a sheet pan.
  • Top with the smoked sausage.
  • Roast in oven for 20-30 minutes, until potatoes are soft.
  • Remove from oven, mix and make wells for eggs.
  • Crack eggs and return to oven.
  • Bake until eggs are at desired doneness.
  • Remove and garnish with cheese.
