Sheet Pan Breakfast – Smoked Sausage and Eggs

Ingredients
1 medium onion, finely diced
3 medium potatoes, finely diced
1 large bell pepper, finely diced
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 pound smoked sausage, sliced
4-6 eggs
grated cheddar cheese (optional garnish)
Directions
- About an hour before breakfast should be done, preheat oven to 400 degree and cut up vegetables.
- Mix the vegetables with olive oil and spread out on a sheet pan.
- Top with the smoked sausage.
- Roast in oven for 20-30 minutes, until potatoes are soft.
- Remove from oven, mix and make wells for eggs.
- Crack eggs and return to oven.
- Bake until eggs are at desired doneness.
- Remove and garnish with cheese.
