How to make jambalaya in the slow cooker.  This recipe uses smoked sausage, but you can use or add chicken and shrimp.  Very flavorful and perfectly cooked rice. Give it a try!

Ingredients

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 1 medium bell pepper, diced

  • 3 celery stalks, sliced

  • 3 garlic cloves, minced

  • 2 pounds smoked sausage, finely sliced

  • 1 can diced tomatoes (recommend Rotel for added flavor)

  • 1-3 tbsp Cajun seasonings (to taste)

  • 1 tsp packed brown sugar

  • 4 cups (1 carton) chicken stock (or make from chicken boullion)

  • 2 cups uncooked jasmine white rice

  • salt and pepper to taste

Directions

  • Prepare vegetables and slice sausage.
  • Saute in slow cooker on high heat.
  • Add diced tomatoes and seasonings and set slow cooker to 3 hours on high or 6 hours on low.
  • When slow cooker completes, add chicken stock and rice.
  • Set to “rice” setting, or low simmer with lid on until rice cooks and absorbs most of the liquid.
  • Season as needed and garnish and serve.
