EASY recipe for strawberry shortcake using sweet homemade biscuits. The biscuits are made with whipping cream instead of butter, so NO dealing with cold butter. Just mix in the whipping cream, pat the dough out, cut and bake. Then top with whipped cream or ice cream and strawberries.

Strawberry Shortcakes from Cream Biscuits

Ingredients

  • Strawberries
  • 1 pint 1 strawberries, sliced

  • 1/4 cup 1/4 sugar

  • Cream Biscuits
  • 2 cups 2 flour

  • 1 tbsp 1 baking powder

  • 1/4 cup 1/4 sugar

  • 1/4 tsp 1/4 salt

  • 1-1/2 cups 1-1/2 heavy whipping cream

  • Homemade Whipped Cream or use Ice Cream
  • 2 cups 2 heavy whipping cream

  • 1/4 cup 1/4 confectioner sugar

  • 1 tsp 1 vanilla

Directions

  • STRAWBERRIES: Wash and slice. Mix with sugar. Cover and refrigerate.
  • BISCUITS: Mix dry ingredients together. Add the heavy cream. Mix into a dough. Pat dough out on floured surface and use a cup or glass to cut out biscuits. Bake at 425F for 7-10 minutes, until just golden brown.
  • WHIPPED CREAM: Beat the whipping cream with mixer until holds peaks. Add vanilla and confectioner sugar. Beat until desired consistency.
  • ASSEMBLE: Split a biscuit and top with strawberries. Drizzle strawberry juice on top biscuit as well. Top with whipped cream or vanilla ice cream. Top with biscuit, whipped cream and garnish with a strawberry.
